Zucchini Boats



Toot! Toot! All aboard this delicious supper!!
Zucchini boats are easy to make, totally versatile and a great way to use up the last of the lovely vegetables in your garden!

2 Tbsp olive oil
1 clove garlic ~ roughly chopped
2  whole zucchinis
1/2 Tsp salt
1/2 Tsp pepper
1/3 cup tomato sauce
3 strips bacon
1/2 of a small green or red pepper ~ diced
1/4 cup red onion ~ diced
1 cup grated cheddar cheese
10 cherry tomatoes (approx)
Fresh basil to garnish

Cook bacon in skillet until crisp, drain on paper towel and when cooled cut or break into small pieces.

Slice ends off zucchini and slice them down the center lengthwise, scoop out the seeds to form a dip to hold the other ingredients. Discard seeds. Sprinkle zucchini with salt and pepper.

In a skillet large enough for your zucchini, heat olive oil on medium and add your garlic, cook until fragrant. Take out and set aside.

Add zucchini to skillet cut side down and cover with lid, letting it sit 5 minutes, turn and cook another 5 minutes. Transfer zucchini to a baking sheet.

Turn oven on to broil

Add sauce to each zucchini then garlic, bacon, pepper, onion and tomatoes, sprinkle cheese on top.

Bake under broiler until cheese has browned.

Garnish with basil!

Suggestions to serve on the side: salad, rice, potato, couscous, steamed vegetables, crusty bread... etc!
The toppings on this can be substituted with whatever meats and/or vegetables you have on hand!
