Quesadillas!

Here is a simple recipe that is perfect for busy weeknights! In my case, I made these one night when I was cooking for just me, they turned out so good I made them the next day for my fiance and he loved them. They are sweet and very cheesy!
One of the ingredients that makes this recipe taste so good is the addition of chili sauce, I used a style of chili sauce that had chunks of peppers, onions and tomatoes.


Ingredients - serves 2 

1 orange pepper, sliced fairly thin (1/4 of a inch?)
1 small onion, thinly sliced
1 tbsp vegetable oil or butter, your choice 
1/2 cup - 3/4 cup chili sauce
salt and pepper
1/2 - 1 cup cheddar cheese
2 green onions, chopped
2 tsp oil or butter
4 large tortillas
salsa or sour cream to serve

(feel free to double up on the recipe depending on how many people you're serving, it's easy to adjust!)


In a large frying pan on medium heat add oil or butter, add in onions, stir and cook for 3-4 minutes. Add in peppers, stir and cook for another 3-4 minutes until peppers and onions are getting soft. Lower heat to medium-low and add in 1/2 cup chili sauce. Stir and coat pepper and onions, adding more sauce if needed to coat them. You don't want it to be too saucy. Taste and season with salt and pepper as necessary.

Heat another large frying pan on medium and add 1/2 tsp butter or oil to lightly coat the bottom of the pan, place one tortilla in the pan and let it get lightly browned. Take out and set aside. Add another 1/2 tsp oil or butter and place next tortilla in the pan, while this one is browning add the pepper and onion mixture on top of the tortilla in the pan, top with cheese (you decide how much!) and sprinkle some green onions on top. Top with the already browned tortilla and lightly press down. Once the bottom is browned, remove to a cutting board. Cut into 4 pieces. 


Repeat with the remaining 2 tortillas, or if you are doubling the recipe, keep going until you're done!

Serve salsa or sour cream on the side to dip!
